I've only seen a couple Amish farms running tractors that actually came
with steel. Most have newer units that they bolt steel on.
MF 1135s, JD 20 series, and up to brand new equipment.
There are at least 3 shops around my area that will build you steel
wheels to fit any tractor you wish. Most look a lot like the plain steel
that steam tractors came with. For traction they bolt on angle iron at a
slight angle or purpose made traction bars. Haven't seen any using the
old lug styles unless it's something like a Fordson or old Case.
