Small aircraft tend to sit with fuel for long periods of time, making the
water in fuel problem much worse. It's standard procedure to drain the
water out of fuel tanks before each flight in a small aircraft, with
drains provided for such. If the water is absorbed into the fuel instead
of being able to be drained out the bottom, you may have a
problem. Having a predictable range is also critical- if you run out
of gas on a trip in an airplane, walking to the gas station can be a
little difficult if you're in a urban area and go through someone's
roof.

There's even more issues than what's listed on the
webpage. Not to say Avgas is real wonderful stuff- the lower octane was
hard to find 30 years ago, the 100LL has issues of its own, including cost
and and lead content, which is why so many folks switched to autogas for
light aircraft. (I volunteered in the place that did the testing for auto
fuel in aircraft, but I was there after the main push, the 20th Street
Hanger for EAA in Oshkosh back when I was in college- I was mainly more
cleaning 40 year old hydraulic fluid out of warbirds)
