Actually it's not George.  The difference is just a technicality but there 
is a difference.  To make this kind of BBQ you cook the whole hog (except 
the head and some folks cook it).  Then it is cut up into big hunks, placed 
on a chopping board and chopped with cleavers into pieces from the size of 
1/4" up to 3/4" or so.  Then it is basted in a sauce that is basically apple 
cider vinager, salt and  black pepper with a bit of crushed red pepper.  You 
simmer the sauce for a while but never boil it.  The recipe varies almost by 
county in NC.  Some places put a little sugar in it.  Some folks add a 
slight amount of mustard.  Here and in Pitt Co. where Pete's place is, it's 
just  salt, pepper and vinager.

Pulled pork in most places is basically roast pork that is just torn off in 
strips and cut into pieces and is not generally chopped as fine as what we 
do here.  When we "pull pork" around here we call it a pig pickin.  Then you 
just cook the hog on a big cooker, open the top and let folks pull off (or 
pick) whatever they want.  I don't know that one is any better than the 
other (pulled Vs chopped) it's just different.  Most of the areas that call 
it pulled pork use some variety of a red sauce similar to beef  BBQ sauce.
