Think of the extra wraps as increasing the diameter of the drum.

Then think of the drum as a wrench handle. The longer the handle the 
more torque you can put on the bolt.

Now think of it in reverse, the drum is the bolt and can only apply X 
amount of torque. If the drum is small it can put more force on the end 
of the wrench then if the wrench is long.

Basically it is leverage from the point of view of the drum (center of 
rotation).

However, as the cable increases the size of the drum and the rpm of the 
drum is constant, the line speed of the cable increase because it has to 
wrap more cable onto the drum with each rotation.
