Copper is expensive. I used pex-al-pex when I did my last shop. Even regular pex would work. It worked great, was cheap cheap cheap, and supper easy to work with. Since it was so cheap I ran extra just for some storage.
No UV resistance though, so I painted it, and ran black pipe for the exposed portions.
I only run 130psi, but a web search says pex is good for 800.
