Rob,  I can tell you by accidental experience from my college days of a more 
pleasant
way to de-rust your knife!  Use a rusted butcher knife to open a can of 
frozen lime juice
concentrate allowing the blade to go way down in the bottom of the can. 
Make the Daiquiris
and drink them.  Go to the football game.  Come home 8 or 10 hours later and 
wipe the knife
blade off with a white face towel.  The knife blade will be sparkling clean 
and rust free and
the towel will be ruined!  LOL.  For David Bruce's benefit I learned that 
technique in 803 C
Sullivan Dorm in the fall of 1969.

To get rust off use Evaporust available at most auto parts stores and then 
wipe the blades with Gibbs. It will last a long long time before you need to 
do it again.

tried suspending the knife with the blades in a solution of Endorust from 
Harbor Freight to remove it? You could probably put the whole knife in the 
solution without damaging anything, but you may not want to do that if you 
are concerned about a residual chemicals.  Sugar beet juice or a soda 
beverage probably will do the same thing at desolving rust.
