My only question is WHY?

As long as you use the proper battery cables and have the regulator set
to charge properly that 6 volt system will work fine.

If you really want to do the conversion, You will need the alternator,
regulator, light bulbs, and coil (if it has a battery ignition), and a
different starter solenoid.

Ammeter, starter, switch, and other switches will be fine.
