[Steam-engine] Hand valve preference, now blowdown

Globe valves are better at regulating flow, but gate valves are less
susceptible to catching debris and are less restrictive. As far as
throttle valves, my Rumely had a gate valve type throttle. I think
our Buffalo Pitts does also.
