[Steam-engine] Hand valve preference

Most old stationary engines had globe type valves on the main throttle valve
and elsewhere.
I don't know the reason for this, but we have always used globe type valves
with good results.
The one exception I can think of is the steam shut offs between the header
and the feeds to the
engines. Here, it was a matter of what we had and what we could afford.
