Hi Gene,
  Since my body doesn't like any wheat at all Spelt is what all my bread is made from.
  I buy White Spelt flour to make other baked goods.
  Try Quinoa pasta some time.  It is great.
   
  $7 for 100 pounds of Spelt?  Sounds like a good deal to me.  I wonder how clean it is??????
  It might be worth the seven bucks just to find out.
