Marc,
Your problem is rather common.  I have a jig built which allows me to use 
the surface of the large bowl as a reference - and using a 3/4" mill 
resurface the "seat for the seat".  If you are confident your needle and 
seat are good (not "new", just "good") you might use some JBWeld (the least 
amount possible) as a filler when you screw the seat/gasket into place.  The 
JBWeld will squeeze out and should form a suitable surface.  Be sure your 
surface is clean (bead blasting should be fine) and I would use the regular 
(not fast) JBWeld (which in my experience is impervious to gasoline).  If 
you don't use too much JBWeld the seat should be removable in the future.
