I've noticed that the knives for my Hesston PT-7 haybine come in under serrated and over serrated styles.  Knives are also available that are not serrated at all.

Under which conditions would you use each type?

This haybine is pulled by a Bealrus 611, driven by an Old Fart who can mow and smoke a cigar at the same time, and who frequently demonstrates this skill.  (But never in the rain!!)
